Anti-candida Greek Tzatziki

Ingredients
4 serves:
- 2 cups plain yogurt
- 1 fresh cucumber (peeled, seeded, and grated)
- 3 cloves garlic (cut very fine or mashed)
- 1/4 cup olive oil
- 1 table spoon lemon
- Some fresh herbs, like dill, basil, or thyme
- Sea salt
Directions
- Place cucumber in a strainer and salt lightly. Let sit about 15 minutes to get rid of the water.
- Combine all ingredients in a mixing bowl, and mix well until oil is fully incorporated
- Add fresh herbs and more salt if needed
- Cover it and refrigerate at least for half an hour before serving if you want to intensify the garlic and herb flavors. You can also serve it right away if you don't have the time
Author's note
Greek Tzatziki is a very good anti-candida recipe for several reasons. Yoghurt contains acidophilus to restore your friendly bacteria. Garlic is a strong anti-fungal, as well as olive oil. Cucumber is a fresh vegetable, allowed in the anti-yeast diet. So you can fully enjoy this recipe... unless you are lactose intolerant... In this case, replace with goat yogurt!
