Apple Honey Mousse with Sliced Almonds

Ingredients
4 servings of apple honey mousse:
- 500gr apples. Choose apples (organic is best) that are naturally sweet, like Red Delicious, Gala, Fuji, Winesap, McIntosh, Yellow Delicious, Mutsu or use a mixture.
- 2 tblspn honey
- 1/2 cup yoghurt
- 2gr agar agar
Directions
- Wash, peel and chop the apples.
- Put about 1 inch of water on the bottom of a large pot. Add apples, honey and agar agar. Put the lid on, and turn the heat on high. When it gets really going, turn it to medium high until the apples are soft.
- Stir the apples vigorously in the pot to mush them up. You can also put them into the food processor or blender to whip them into a smooth puree.
- Let it cool down a little bit.
- Whip yoghurt and add it to the apple sauce.
- Pour in 4 cups and put in the fridge.
- When ready to serve, add sliced almonds and honey on top.
Author's note
According to nutritionists, the Red Delicious are best for the skin because they contain high amounts of collagen and elastin, both great for
youthful skin.
However the best way to obtain the benefits of apples is to eat them raw so that you don't loose the vitamins and nutrients in the process of cooking.
The apples are cooked in this recipe, but it still makes a healthy alternative for a refreshing dessert if you use honey as a sweetener and yoghurt that contains friendly bacteria.
