Apricot Ginger Jam

Ingredients
- 1 kg fresh and sweet apricots
- 600 g sugar (less is best... it will make a healthier apricot spread with a reduced sugar content)
- 1 tblspn grated ginger
- 1 tspn of agar powder
You will also need:
- A big cooking pot
- A stirring spoon (ideally wood)
- A ladle
- 4 glass jars
Directions
The day before...
- Wash and cut the apricots in half and remove the stone.
- Place apricots, sugar, and ginger in a medium-size pot and leave overnight (at least 3 hours but even better the whole night).
Ready to start?
- Wash jars and lids and put them in boiling water (for at least 5 minutes) to kill the germs. Do it before starting making jam.
- Heat the apricot preparation in medium heat for about 25 minutes keeping the boil and stirring constantly. When it first starts boiling, it’s going to produce some foam, that you will skim off with a ladle to keep the pot from overflowing. Keep the foam in a jar and let it settle, it makes really good apricot syrup!
A few minutes before the jam stage is reached...
- If you want to add agar powder for thickening. Mix Agar powder to a little bit of water. Add it to the apricot jam and mix well. The jam will get thickener when it cools down.
- Test the jam for firmness by putting a large metal spoon with a small
amount of jam in the freezer for a couple of minutes until the jam is
chilled. Keep on boiling if it still seems too liquidy. When it's ready, turn off the heat.
When your apricot jam is ready....
- Ladle the apricot jam in the hot jars to about 1/4” below the rim. Make sure you don't get burned by using a cloth to hold the jars. Cover with a tight fitting lid. Do the same with the other jars and turn them upside-down. Allow to cool.
- The jam can be stored unopened for several months in a cool place. Once opened store in the refrigerator. The jars that are not sealed (or not sealed properly) can be kept for a few weeks.

Jams tend to be high in sugar and low in nutrients unfortunately. This apricot jam recipe contains less sugar than other recipes but you can still put even less sugar or use a natural sweetener to make it healthier for you.
So this isn't really an anti-inflammatory recipe but ok to eat with moderation if you don't have problems with sugar.... Avoid if you are doing an anti-candida diet.
