French Strawberry Sorbet

Ingredients

6 serves:
  • 500 g strawberries (organic is best) or frozen unsweetened strawberries
  • 125 g sugar (max...)
  • 1 tbsp lemon juice
  • 6,5 cl water

Directions

  • Melt the sugar and water in a small saucepan over low heat, and stir until the sugar is completely dissolved. Boil the mixture for one minute then remove from heat.
  • Gently wash strawberries and cut off any dark or rotten flesh.
  • Stem strawberries.
  • Pass the strawberries through a food mill to get a smooth seedless strawberry puree.
  • Add the sugar and lemon juice to the strawberry puree and mix so that the sugar dissolves in the puree.
  • Pour the mixture into a 8 inch stainless steel pan (sorbets freeze faster in stainless steel), cover with plastic wrap, and place in the freezer. When the sorbet is completely frozen (2 to 3 hours), remove from freezer and let stand at room temperature until partially thawed.
  • Serve garnished with mint.

Author's note

This strawberry sorbet is to die for if you can find juicy, sweet, and fragrant strawberries. It is a very refreshing dessert but can also be served as a palate cleanser between courses...

Strawberries are also a good source of vitamin C and possess healing qualities. They are anti-inflammatory and contains lots of antioxidants.

Sorbet doesn't contain milk or cream. It does contain a fair amount of sugar though. So, do not eat this strawberry sorbet too often. However, you can adjust the amount of sugar and it is  still a better alternative for people who are lactose intolerant.

This recipe is not anti-inflammatory and this is what I explained in the author's note. It is still a better alternative to ice cream especially for people who are lactose intolerant and the amount of sugar can be adjusted. Also, the inflammatory factor depends on people and the type of sugar you are using. It is better to opt for natural sweeteners like stevia, honey, or blackstrap molasses, than refined sugar.

With this much sugar wouldn't this be inflammatory? Sugar is one of the most inflammatory foods! Low fat, yes, but anti inflammatory...?
