Garlic Sweet Potatoes

Ingredients
4 servings
- 1 big sweet potato (about 1 kg)
- min 4 garlic cloves (minced)
- 2 tablespoon of olive oil
- 1/2 teaspoon of turmeric
- Fresh parsley (minced)
Directions
- Heat 1 tablespoon of olive oil in a large frying pan and sauté garlic until soft. Do not brown. Set aside.
- Sauté potatoes and turmeric in olive oil until potatoes are brown.
- Add garlic and sprinkle with parsley.

This garlic sweet potatoes recipe is a very good anti-inflammatory recipe.
Sweet potatoes are an excellent source of vitamin A (in the form of beta carotene) and a very good source of vitamin C. Sweet potatoes have skin healing properties as an antioxidant food.
