Nut snack cake - sugar-free

Ingredients

Makes 14 small nut snack sugar-free cakes

Dry ingredients:
  • Brown rice flour - 2 cups
  • Baking powder - 5 teaspoons
  • Oats - 1 tablespoon
  • Seeds: a mix of sesame, sunflower, pumpkin, flax seeds... whatever you feel like putting in your recipe
  • Sea Salt - 1/2 teaspoon

Liquid:
  • 2 Eggs
  • Olive oil - 2 tablespoons
  • Water - 1/4 cup
  • Tahini (optional)

To put on top of each nut snack cakes:
  • 1 raw almond (or walnut) on each cake
  • Coarse sea salt
  • Herbes de provence or other dried herbs

Directions

  • Mix all the dry ingredients
  • Add the 2 eggs, then olive oil, and tahini
  • Add water until it forms a smooth dough. It should remain sticky. Do not knead the dough too much
  • Form into about 14 small buns and place on greased pan for baking
  • Add an almond or walnut on top and sprinkle with herbs de provence and coarse sea salt
  • Put in the oven and bake at 360 degrees Fahrenheit for about 30 minutes
  • Plant your knife in one of them to be sure it is well baked

Author's note

These sugar-free nut snack cakes make a good addition to an anti-candida diet. They contain no sugar, no yeast, no dairy, no gluten, and they are still yummy!

Nuts are very nutritious and are important to keep your skin healthy. They are rich in essential fatty acids and other nutrients. You shouldn't eat too many of them on an anti-candida diet but it is usually fine to eat some every day (except peanuts)
