  • Recipe type: "vegetarian"
  • Preparation: 30 minutes
  • Cooking: 15 minutes

Ingredients

Recipe for 4 veggie burgers:
  • 1 cup beans like garbanzos (cooked and drained)
  • 2 cups mushrooms (chopped and fresh)
  • 1 medium onion (chopped)
  • 1 clove garlic (minced)
  • 2 eggs
  • Salt, cayenne pepper
  • Fresh cilantro
  • 1/4 cup Wheat germ (optional)

Directions

  • Warm a pan, add the olive oil and sautee the onion for about 4 minutes, until tender. Add mushrooms and Garlic and cook for about 5 minutes. Mix , set aside, and cut in very small pieces if necessary.
  • Mash beans in a medium size bowl with fork.  Add the rest of ingredients (apart from wheat germ). Mix all together and let stand a few minutes.
  • Form into burgers and roll in wheat germ. Cook with a little bit of olive oil, 3 minutes on each side. You are ready to serve your mushroom veggie burgers!

Author's note

  • Because mushrooms add a meaty texture to foods, it is perfect to make a veggie burger with no meat.
  • Mushrooms also contain essential nutrients such as phosphorus, magnesium, potassium and selenium, and are also a good source of fiber. They contain antioxidants that are beneficial for your skin.
  • Beans are full of proteins and fibre. See the nutritional value for beans: http://www2.state.id.us/bean/nutrition/value.htm
  • Eating meat can trigger inflammation of the skin for many people with skin conditions. It is nice to find a good veggie burger as an alternative to beef burgers.
