Winter stir fry

Ingredients
For 4 servings:
- Broccoli (1) - cut into 1 1/2'' pieces
- Baby bok choy (2) - cut in small pieces
- Carrots (2) - cut in thin layers
- Large onions (2) - sliced
- Red or yellow bell pepper (1 each) - cut into 1 1/2'' pieces
- Snow peas - 1/2 cup
- Garlic (2 cloves) - minced
- Tamari sauce or light soy sauce
- Olive oil - 1/4 cup
- Water - 1 cup
Directions
- In a large pan, add water and bring to a boil.
- Add vegetables (except bok choy).
- Cover and cook about 7 minutes.
- Drain and put back in the pan. Add bok choy.
- Mix garlic, tamari and oil and add to vegetables.
- Cook (low heat) for 5 minutes.
Add on portions of brown rice - Brown rice takes longer to cook (about 40 minutes at low heat).

Use seasonal vegetable for this recipe. This selection of vegetable is full of nutrients. Olive oil adds some omega 9 for your skin...
